Countdown to Cooking with Fire! June 28th – July 5th
Following on the heels of the First Annual Woodcarvers’ Weekend at Searsport Shores June 27th – 29th, comes a week of wood-fired cooking and baking. We will roast, bake, steam, broil, seethe, sear, simmer, fry, toast, and possibly even grill, the best ingredients we can rustle up locally. Every day will be different as we explore the potential and inspiration that Searsport Shores’ wonderful location brings us.I’m looking forward to a flatbread session, a focus on baking naturally leavened bread, a greenwood spit- building project, then, of course, how to roast something using a spit. And we’ll of course have to make cheese borek and campfire baklava on a griddle, and maybe find some mussels to flash-flame under pine needles! And let’s mess around with cooking with hot rocks a bit…We’ll let the actual weather determine our final schedule, but I’ll post a rough draft as soon as we are within the NOAA prediction range.Extra — at the Penobscot Marine Museum, Tuesday, July 1st, 7pm.For those with an interest in food history and archaeology, I will be giving a slide talk called , an investigation into the baking technologies used by 17th-century French and English colonists.

Paula Marcoux is a food historian who consults with museums, film producers, publishers, and individuals. Her training is in archaeology and cooking, and she enjoys applying the knowledge of past cooks and artisans to today’s food experience. She builds wood-fired ovens both experimentally and for keeps, and has worked on a broad range of projects.
